Today, most intelligent observant Jews believe that the dietary laws have nothing to do with physical health.  Interestingly, Nachmanides does not quite agree.  In discussing the rules that water creatures should only be eaten if they have fins and scales, he writes that fish that have fins and scales “dwell in the upper clear waters” while forbidden fish (and presumably shellfish) “dwell in the lower turbid waters, and due to the great abundance of moistness and gatherings of waters there, they cannot repel anything.  Hence they are creatures of cold fluid, which cleaves to them and is therefore more easily able to cause death.”   Alas, medieval science was junk science by today’s standards.
